Balsamic Roasted Fennel

We often challenge ourselves when grocery shopping to select items we have yet to use and become determined to create something delicious with them! This time it was fennel and what a delightful treat. This vegetable is light, slightly sweet and wonderfully aromatic. It is often said to have licorice undertones that become more subtle once roasted. Being so versatile, try adding fennel raw to salads or wraps to give a nice crunch, incorporate into your next soup recipe or roast like we have below!

The trick behind the guacamole is selecting your avocados.  Choose ones that you can push into slightly with your finger; meaning they are the perfect ripeness. Too hard or too soft are not your best options here. This is a recipe that can be adjusted to your liking and you can easily double the recipe for a larger crowd! We have also made guacamole without the cilantro for those who are not enthusiasts of the flavour.
