Balsamic Roasted Fennel

We often challenge ourselves when grocery shopping to select items we have yet to use and become determined to create something delicious with them! This time it was fennel and what a delightful treat. This vegetable is light, slightly sweet and wonderfully aromatic. It is often said to have licorice undertones that become more subtle once roasted. Being so versatile, try adding fennel raw to salads or wraps to give a nice crunch, incorporate into your next soup recipe or roast like we have below!
