Balsamic Roasted Fennel

We often challenge ourselves when grocery shopping to select items we have yet to use and become determined to create something delicious with them! This time it was fennel and what a delightful treat. This vegetable is light, slightly sweet and wonderfully aromatic. It is often said to have licorice undertones that become more subtle once roasted.
