Balsamic Roasted Fennel

We often challenge ourselves when grocery shopping to select items we have yet to use and become determined to create something delicious with them! This time it was fennel and what a delightful treat. This vegetable is light, slightly sweet and wonderfully aromatic. It is often said to have licorice undertones that become more subtle once roasted. Being so versatile, try adding fennel raw to salads or wraps to give a nice crunch, incorporate into your next soup recipe or roast like we have below!

What you will need:

  • 1 fennel bulb; quartered
  • 1.5 tbsp. olive oil
  • 2 tbsp. balsamic vinegar
  • Salt and pepper
  • Pinch of garlic powder
  • Fennel fronds for garnish

Directions:

Prep Time: 10 minutes  ◊  Cook Time: 40 minutes

  1. Preheat oven to 400 degrees F.
  2. To prepare your fennel bulb, cut off green stalks. Set aside a small amount of fennel fronds and discard the rest.
  3. Slice fennel bulb in half lengthwise, then continue to slice lengthwise into approximately 1 inch quarters.
  4. Transfer quarters to a mixing bowl and gently toss to coat in olive oil, salt, pepper, garlic powder and balsamic.
  5. Spread fennel quarters onto a greased (or foil covered) baking sheet, and spoon remaining balsamic over the top.  Bake for 40 minutes until tender and caramelized; turning halfway. Garnish with fennel fronds and serve!
